For no-meat monday this week, we went with this wat recipe, more or less.


1 c dried brown lentils
1 onion, finely chopped
2 cloves garlic, minced
1 tsp berbere
2 c tomato, finely chopped
1/2 c tomato paste
1 c water
1 c frozen peas
olive oil, butter, salt, black pepper


rinse and cook the lentils. heat oil and butter on medium and saute some of the berbere. add the garlic and onions and saute for a few minutes. add the rest of the berbere and saute a couple more minutes. add the tomatoes and tomato paste and simmer for 5-10 minutes, stirring occasionally. add the cooked lentils and the water (decrease/increase the water if the lentils are too wet/dry) and the peas. simmer for another 5 minutes or so, until the consistency looks right. add salt and pepper to taste.
