Fake Shack Burger

I made this fake Shake Shack burger recipe (from Epicurious by way of Smitten Kitchen) and it was about perfect. I did it on a cast iron griddle on the grill, which saved a lot of kitchen cleanup.

Chili

Yet another chili recipe. This one is pretty easy in that it just uses ground meat and powdered spices, except for some dried or frozen peppers. Substitute whatever peppers you might have handy, or chili powders. This is bordering on a little too much meat to brown in even a…

Doenjang jjigae – Korean tofu, vegetable, and beef stew

From this recipe from Sunset. This one came out very good, and very Korean. I would make it again, though I’m not crazy about the combination of cabbage, zucchini and daikon (though Korean as that is). The broth was delicious, and I’d try it perhaps potatoes and mushrooms as well.…

Viet-Korean Braised Roast

After the carnitas fail, I decided to just repeat the pressure-cooker braising part, with a slight adjustment to make the beef less salty. Here is the result: a delicious braised tri-tip roast with strong asian flavors. Ingredients 3 lb tri-tip roast, cut into 2″ chunks 4 cloves garlic, minced 2″…

Viet-Korean Karnitas FAIL

Due to certain events, we had a lot of beef to cook in a short time, and so I decided to experiment with combining the technique of carnitas with the flavorings of pho and kalbi. The first step, slow-cooking (or this case pressure-cooking) the beef actually was not a fail…

Vietnamese Rice and Kalbi Beef Soup

This is based on my rice and grilled pork soup recipe, which itself is just one way of using leftover pho broth. This time, I decided to experiment with the broth a little, using this recipe. Also, instead of making the kalbi with country ribs I went with bottom round…

Asian Beef Broth

This broth is based on my pho recipe, but I scaled back the spices relative to the beef flavor a little. I also took a couple of ideas from the cinnamon beef recipe, adding a cinnamon stick and a little soy sauce. Finally, I added some mushrooms for a little…

Cinnamon Beef Noodles

Another recipe from Asian Noodles, adapted for the pressure cooker. When it was hot off the stove, the broth was very good — spicy and cinnamony — but the next day it had somehow lost the edge of both of those flavors, which is funny because Simonds specifically says it…

Pho in a Pressure Cooker

The first project for my new chanukkah pressure cooker: pho. I started with this recipe with a few changes. The end result was pretty good. The flavor overall could have been a little more intense, but the balance of beef and spices was about right (in the past I’ve made…
